No-Bake Rare Blueberry Cheesecake is a rich, creamy, and refreshing dessert that looks elegant but is very easy to make! Since there’s no baking involved, it’s a beginner-friendly recipe perfect for special occasions or everyday treats. The smooth and creamy cheesecake pairs beautifully with the sweet and slightly tart blueberry sauce, creating a perfect balance of flavors. “Rare cheesecake” is a very popular style of cheesecake in Japan, known for its light, mousse-like texture, but I realized it’s still unique and less common in the U.S. If you enjoy no-bake desserts, this Japanese-style rare cheesecake is definitely worth trying!

Ingredients

Ingredients for no-bake rare blueberry cheesecake

(For one 7-inch cake pan)

For the Crust

  • Graham crackers or graham biscuits: about 1½ cups crushed
  • Unsalted butter, melted: 4½ Tbsp

For the Rare Cheesecake Filling

  • Cream cheese: 8 oz (softened at room temperature)
  • Sour cream: 4 oz (soften at room temperature)
  • Heavy cream: 1 cup
  • Sugar: 5 Tbsp
  • Lemon juice: 2 Tbsp
  • Powdered gelatin: ½ Tbsp
  • Water: 2 Tbsp

For the Blueberry Sauce

  • Lemon juice: 1 Tbsp
  • Blueberries: about 1 cup
  • Sugar: 3 Tbsp

STEP-BY-STEP INSTRUCTIONS

1. Bloom the gelatin
Sprinkle the powdered gelatin over 2 tablespoon of water in a small microwave-safe container. Set it aside to bloom.

2. Make the crust
Place the graham crackers in a plastic bag and crush them evenly into fine crumbs using a rolling pin or something similar. Transfer the crumbs to a bowl, add the melted butter, and mix well until evenly combined.

Line the bottom of a 7-inch cake pan with parchment paper. Spread the graham cracker mixture evenly over the bottom of the pan. Place a piece of plastic wrap over the crumbs, then use the bottom of a flat glass or cup to firmly press and compact the crust. Use the back of a spoon to press the edges as well. Refrigerate while preparing the filling.

3. Prepare the cheesecake filling
Place the softened cream cheese in a bowl. Gradually add the sugar while mixing until smooth and creamy. Add the sour cream and lemon juice, then mix well until fully combined.

Add the heavy cream and whisk about 30 times until evenly mixed. For an extra smooth texture, strain the mixture through a fine mesh sieve into another bowl. This step is optional but recommended.

4. Melt the gelatin
Microwave the bloomed gelatin for about 10 seconds at 1200W, or just until fully melted. Do not overheat or boil the gelatin, as overheating may prevent the cheesecake from setting properly.

5. Combine and chill
Add the melted gelatin to the cheesecake mixture and stir well until evenly combined. Pour the filling over the prepared crust and smooth the surface. Refrigerate for at least 4–5 hours, or until fully set.

6. Make the blueberry sauce
Add the blueberries, sugar, and lemon juice to a microwave-safe bowl. Gently stir with a spoon to evenly coat the blueberries. Lightly cover with plastic wrap and microwave for about 1 minute, or until the blueberries soften and release their juices. Let it cool completely in the refrigerator.

7. Serve
Once the cheesecake is fully set, remove it from the pan and top with the chilled blueberry sauce before serving.

Recipe Tips

  • Warm the cake pan before removing the cheesecake: To remove the cheesecake from the mold more easily, wrap the outside of the cake pan with a hot towel for a short time. Slightly warming the pan helps release the cheesecake smoothly without damaging the sides.
  • Warm the knife for clean slice: Dip the knife in hot water and wipe it dry before slicing the cheesecake. A slightly warm knife helps create smooth and clean cuts.
  • Do not overheat the gelatin: Heat the gelatin only until fully dissolved. Overheating or boiling may affect the gelatin and prevent the cheesecake from setting properly.

A. Yes. Frozen blueberries work well for the sauce. There is no need to thaw them before microwaving.
