QUICK CARROT SALAD
A quick, refreshing carrot salad with a sweet-tangy dressing and raisins—ready in minutes and perfect for any meal.

- 1 pound carrots
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 tablespoon maple syrup
- 1 pinch sea salt
Julienne or thinly chop the carrots.
In a small bowl, combine the olive oil, apple cider vinegar, maple syrup, and salt. Whisk until well blended, then set aside.
Add the raisins to the bowl of carrots, then pour the dressing over everything. Toss well until evenly coated. Let it sit for few minutes to allow the flavors to soak in.
