- 1 onion / medium
- ½ cup soy sauce
- 4 tablespoon sake
- 1 tablespoon sugar
- 4 tablespoon rice vinegar
- 1 tablespoon lemon juice
- 1 tablespoon roasted sesame oil
- 3 tablespoon olive oil or neutral oil
- 1 clove garlic
- ¼ teaspoon sea salt
- 2-3 pinch black pepper
Prepare the onion:Finely chop the onion using a food processor (or grate it by hand if you prefer). You should have about 1 cup of chopped onion.
Make the sauce base:In a small pot, combine all ingredients except the onion — soy sauce, sake, sugar, rice vinegar, lemon juice, sesame oil, olive oil, sea salt and black pepper. Heat over medium heat and stir until the sugar is fully dissolved.
Add and cook the onion:Once the sauce is warm, add the chopped onion. Stir well and continue cooking over medium heat for about 4–5 minutes, until the onion is fully cooked and translucent. (Cooking the onion completely helps extend the dressing’s shelf life.)
Cool and store:Remove from heat and let it cool completely. Transfer the dressing to a clean, airtight container or jar. Store in the refrigerator.
