Green Beans with Peanut Sauce
Quick, colorful, and full of umami—green beans meet peanut perfection in this easy side dish.

- 10 oz green beans
- ¼ teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 2 tablespoon roasted peanuts
Crush the roasted peanuts using a grinder, or place them in a plastic zip-top bag and gently smash them with a rolling pin until finely crushed.
Line up the green beans and trim off the both stem ends. Then cut them into 1-inch pieces.
Bring a pot of water to a boil and add ¼ teaspoon of salt. Boil the cut green beans for 3 minutes, stirring occasionally.
Drain the boiling water, cool the green beans under running water to stop the cooking process, then drain well and gently pat dry with a paper towel.
In a medium mixing bowl, combine soy sauce and maple syrup, and mix well. Add the green beans and toss until evenly coated.
Add the crushed peanuts to the bowl and toss until the green beans are evenly coated.
