BLACK SESAME PUDDING (KURO GOMA PURIN)

- 2 cups Milk
- ½ cup Heavy cream
- 5 tablespoon Sugar
- 4 tablespoon Black sesame paste
- 2 teaspoon Gelatin
- 2 tablespoon Water (to bloom gelatin)
- as needed Whipped heavy cream (for topping)
In a small microwavable bowl, combine the gelatin and water and let it bloom.
In a small pot, warm the milk and heavy cream over low heat (about 50–60°C / 122–140°F). Don’t boil.
Add the sugar and stir until dissolved, then add the black sesame paste and mix until smooth.
Microwave the bloomed gelatin for about 10 seconds (1200W) or until fully melted, then add it to the pot and whisk for about 30 seconds until combined.
Set the pot in a large bowl filled with ice and cool the mixture for about 30 minutes, stirring occasionally, until it’s fully chilled and slightly thickened.
Pour the mixture into dessert cups. Then cover with plastic wrap and refrigerate for at least 2 hours until set. Serve with whipped cream if you like.
