This Japanese Onion Dressing is a simple yet flavorful condiment you’ll want to put on everything. Made with fresh onion and soy sauce, it’s healthy, light, and full of umami. Ingredients

  • Onion: 1 medium
  • Tamari soy sauce: ½ cup
  • Sake: 4 Tbsp
  • Sugar: 1 Tbsp
  • Rice vinegar: 4 Tbsp
  • Lemon juice: 1 Tbsp (from ¼ lemon)
  • Roasted sesame oil: 1 Tbsp
  • Olive oil (or neutral oil): 3 Tbsp
  • Garlic: 1 clove
  • Sea salt: ¼ teaspoon
  • Black pepper: 2–3 pinches

Step-By-Step Instructions

1. Prepare the onion:
Finely chop the onion and garlic using a food processor (or grate it by hand if you prefer). You should have about 1 cup of chopped onion.

2. Make the sauce base:
In a small pot, combine all ingredients except the onion — soy sauce, sake, sugar, rice vinegar, lemon juice, sesame oil, olive oil, sea salt and black pepper. Heat over medium heat and stir until the sugar is fully dissolved.

3. Add the onion:
Once the sauce is warm, add the chopped onion. Stir well and continue cooking over medium heat for about 4–5 minutes, until the onion is fully cooked and translucent.

4. Cool and store:
Remove from heat and let it cool completely. Transfer the dressing to a clean container or jar. Store in the refrigerator.

Top Tip

  • Cook the onion thoroughly: this step is key! It not only mellows the flavor but also improves shelf life.
  • Storage: Once cooled, store in an airtight container in the refrigerator. It will keep for about 1 week.
