This simple side dish is a Japanese home-cooking favorite. Crisp green beans are tossed in a slightly sweet, nutty peanut sauce that’s full of flavor but easy to make. It’s perfect as a quick veggie side for everyday meals—and a great way to get kids to eat more greens!

  • ¼ teaspoon salt
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 2 tablespoon roasted peanuts

Step-By-Step Instructions

Step 1: Crush the roasted peanuts using a grinder, or place them in a plastic zip-top bag and gently smash them with a rolling pin until finely crushed.

Step 2: Line up the green beans and trim off the both stem ends. Then cut them into 1-inch pieces.

Step 3: Bring a pot of water to a boil and add ¼ teaspoon of salt. Boil the cut green beans for 3 minutes, stirring occasionally.

Step 4: Drain the boiling water, cool the green beans under running water to stop the cooking process, then drain well and gently pat dry with a paper towel.

Step 5: In a medium mixing bowl, combine soy sauce and maple syrup, and mix well. Add the green beans and toss until evenly coated.
